I met a new friend today…I found her on Craigslist!!
She’s a very nice lady who wants to learn canning in exchange for teaching me soapmaking. We made a very nice soap with the oils from the basement and then went on to do some waterbath canning. We did Rhubarb Preserves:
8 cups chopped rhubarb
2 cups sugar
2 TBSP vanilla extract with mint
Let rhubarb sit for 3-4 hours with sugar. Then, bring to a boil. Load into sterilized jars and water bathe for 15 minutes.
After she left, I did some more. Then, going off on a lark did some rhubarb syrup.
Rhubarb syrup – and it’s kicking!!!
4 cups rhubarb
1 cup sugar
1 cup water
2-3 sprigs fresh mint
4-5 springs fresh thyme
1/2 inch of peeled ginger
Bring rhubarb and sugar to a boil. Put mint, ginger & thyme thru food processor until lightly chopped. Add rhubarb/sugar/water mix and process until complete mush. Strain thru cheese cloth.
The liquid is the syrup, the solids can become a jam of sorts.
Either way, process both in hot water bath 15 minutes.
And, because all of this rhubarb came from the grocery store, my own, sad little rhubarb not quite of size to feed us yet, I give you my tiny rhubarb plant!
